This white wine is made from the Sauvignon grape (85-100%), with the permitted addition of local white grapes (0-15%).
Alto Adige Sauvignon DOC, or Südtirol/Südtiroler Sauvignon DOC is a light yellow wine with green reflections. The scent is pleasant and fruity, while the taste is dry and distinctive.
A Riserva type is also available, with a mandatory period of aging of 2 years, starting with October 1st of the harvesting year. The minimum alcohol content is 11.5%.
The wine is available as “Passito” or “Late grape harvest” (late harvest), where the grapes are dried into raisins before pressing. Both types are always semi-sweet or sweet, rich and harmonious. The “Passito” type has 16% alcohol content, whereas the “Vendemmia Tardiva” 13.5%.
Both types must age until at least June 1st of the year following the harvest before being released onto the market.
If the label mentions “Vigna” (Gewächs or Wachstum), followed by the name of a place, it refers to a specific vineyard area or a “micro zone”.
The wine is a wonderful accompaniment of light antipasti, trout and vegetable risotto.
