Alto Adige Cabernet DOC is a red wine which may contain Cabernet Sauvignon and/or Cabernet Franc grapes (85-100%). The name of the dominant grape will appear on the label.
The wine is also known as Alto Adige/Südtiroler Cabernet DOC.
This is an interesting ruby red wine, fairly light in texture and with good fruit. The aroma is distinctive, slightly grassy, with a herbaceous touch, while the taste is dry, rich and slightly tannic. Often, Alto Adige Cabernet DOC has a maturation period of 4 to 10 years, after which the herbaceous hint is replaced by an inviting softness. The wine obtains a garnet red color as it ages.
Alto Adige Cabernet Sauvignon DOC in particular is a wine that ages wonderfully and which can measure up to some of Italy’s best red wines.
The barrel-aged Alto Adige Cabernet Riserva DOC is also available, with a mandatory aging period of 2 years, starting on October 1st of the harvesting year.
If the label mentions “Vigna” (Gewächs or Wachstum), followed by the name of a place, it refers to a specific vineyard area or a “micro zone”.
Depending on the harvest, the aging potential is usually 3-4 years for the non-aged type and typically 7 years for the Riserva type, making it a perfect accompaniment of steak.
