This dessert wine, Alto Adige Südtiroler Bianco Passito DOC, is made from the same impressive grape composition as in the case of the dry Alto Adige Bianco DOC.
The grape varieties used are therefore Chardonnay and/or Pinot Bianco and/or Pinot Grigio (75-100% minimum of two of these and 0-70% of each), Müller Thurgau and/or Sauvignon and/or Riesling and/or Sylvaner and/or Gewürztraminer and/or Kerner (0-25%), with the permitted addition of local white grapes (0-5%).
Following harvest, the grapes are dried either on the vine, on shelves in special drying rooms or in ventilated spaces.
This wine is also known as Südtirol/Südtiroler Bianco (Weiss) Passito DOC.
The color of the wine depends, of course, on the dominant grape, but generally, it is a bright golden color. The aroma is pleasant, delicate and distinctive, depending on the grape type, while the taste is semi-sweet to sweet, mellow, harmonious and characteristic.
The wine is released on the market after June 1st of the year following the harvest.
A "Vendemmia Tardiva" (late harvest) type is also available with a minimum alcohol content of 14%.
The wine pairs well with dessert, especially with cream cakes.
