Serravalle is a subzone of Colli Bolognesi where there are more stringent requirements for wine production than under the generic DOC title.

Colli Bolognesi Serravalle Cabernet Sauvignon Riserva DOC is a red wine with the same grape composition as the non-barrel aged Colli Bolognesi Serravalle Cabernet Sauvignon DOC, namely Cabernet Sauvignon grapes (85-100%), with the permitted addition of Merlot (0-15%).

At a young age, the wine is ruby red, but it becomes garnet red with age. The scent is distinctive, characteristic of the Cabernet Sauvignon grape, and the taste is full-bodied, dry, soft and extremely harmonious.

The mandatory aging period is 3 years, of which at least 1 year in wooden barrels and the aging potential is 7-8 years.

The wine should be enjoyed on special occasions.
