It's not often you see a red Vin Santo, but in 1991, when Carmignano became an independent DOCG, they simultaneously expanded the Vin Santo list with a red of that type.
Vin Santo di Carmignano Occhio di Pernice DOC is produced from the grapes Sangiovese (min. 50%) and Malvasia Nera (10-50%), together with other, specially selected red grapes from the Prato province.
After plucking, the grapes are dried on straw mats or shelves in custom houses, and pressing is done between December 1 of the harvest year and March 31 of the year after the harvest.
Color-wise, the Vin Santo di Carmignano Occhio di Pernice ranges from an intense red to a light red. The aroma is warm and intense, and the taste is sweet, smooth, velvety and well-rounded.
There is also a Vin Santo di Carmignano Occhio di Pernice Riserva with a longer aging requirement.
Occhio di Pernice actually means "bird's eye", but it's unknown as to why this addition was made.
