This is an interesting dessert wine made from red grapes. It consists of Sangiovese (50-100%) and other local, non-aromatic red grapes (0-50%).
As is the case with the white Vin Santo from San Gimignano, the grapes are selected and gently plucked, after which they are dried in custom drying rooms or old drying lofts.
The color varies from light to intense rose. The aroma is delicate, warm and characteristic, while the taste is velvety and round.
Mandatory aging is 3 years beginning December 1 of the harvest year. The wine must also refine for an additional 4 months in the bottle.
