San Gimignano Vin Santo DOC is a dessert wine made from the grapes, Trebbiano Toscano (30-100%), Malvasia del Chianti (50-100%) and Vernaccia di San Gimignano (0-20%). Local, non-aromatic green grapes may also be added (0-10%).
The grapes are selected, gently plucked and then dried in special rooms or drying lofts until they are almost raisin size, after which they are pressed.
The result is a wine that color-wise spans from a dark gold to a golden yellow. The bouquet is ethereal, intense and characteristic, while the aroma is harmonious, smooth and persistent. The taste ranges from dry to sweetish.
The mandatory aging period is 3 years, starting from December 1 of the harvest year. The wine must age a minimum of 4 months in the bottle.
