This Vin Santo (holy wine) isn't especially holy, but is well suited, on the other hand, for desserts .
The grapes are the same as in Pomino Bianco and the Reserve version, which is synonymous with Pinot Bianco and/or Pinot Grigio and/or Chardonnay (70-100%), with permission to use additional local green grapes (0-30%).
The aforementioned grapes are selected and dried on the vine, after which they are gently plucked. They can also be plucked and then brought into custom designed drying rooms.
This white wine's color varies from straw yellow to intense amber. The bouquet is ethereal and intense, the taste harmonious, velvety and characteristic.
The wine is released for sale after November 1 of the third year following the harvest.
