One of the Tuscan specialties is the red dessert wines of the type Vin Santo Occhio di Pernice (the bird's eye). The grapes consist of Sangiovese (50-70%), Malvasia Nera (10-50%), together with other local red grapes (0-30%).
After plucking, the grapes are dried naturally in custom drying lofts or specially ventilated rooms, and the drying must take place between December 1 of the harvest year and March 31 of the following year.
The production process produces an intense, pink to light rose-colored wine. The aroma is warm and intense, and the taste sweet and delightfully smooth and well-rounded.
This type is available as a dry (Secco) and a sweet (Amabile) version.
The mandatory aging period is 4 years in small oak barrels (Caratelli).
