Colli dell’Etruria Centrale Vin Santo is a white dessert wine made from the grapes Trebbiano Toscano and/or Malvasia del Chianti (70-100%), with permission to use other local green grapes.
The grapes are selected and plucked carefully, after which they are dried in custom drying rooms. These can be specially ventilated rooms or drying ceilings. The vinification is done between December 1 of the harvest year and March 31 of the year after the harvest.
The wine is produced in 4 versions: Abboccato (semi-sweet), Amabile (slightly sweeter than Abboccato), Dolce (sweet) and Secco (dry).
The aforementioned process produces an intense golden to amber dessert wine with an ethereal, intense and characteristic bouquet. The taste is harmonious and smooth, and, in the sweeter version, there is a decidedly round taste.
Mandatory aging period is 3 years in small oak barrels (Caratelli), and the alcohol concentration is a minimum of 15%.
There is also a Reserve, where the aging requirement is 4 years and the alcohol concentration is 15.5%.
Goes well with desserts, but is also suitable for those quiet, meditative moments.
