This Vin Santo uses the same grapes as in Capalpio Bianco, namely Trebbiano Toscano (50-100%), with permission to use local, non-aromatic green grapes (0-50%).
The harvest takes place between December 1 of the harvest year and March 31 of the year after. The grapes are selected and gently plucked, after which they are dried in specially designed rooms, building or lofts.
The result is a dessert wine that color-wise spans from intense gold to amber. The aroma is ethereal, intense and characteristic, while the taste is harmonious, velvety and well-rounded, and is either dry or sweet.
The mandatory aging period is 2 years in small oak barrels (Caratelli), and the wine is released for sale on November 1 in the third year after the harvest.
Goes excellently with desserts or to a quiet moment.
