This is a red dessert wine made from the Sangiovese (50-70%) and Malvasia Nera (30-50%) grapes, along with local red grapes (0- 30%).
After plucking, the grapes are dried naturally between December 1 of the harvest year and March 31 of the year following the harvest.
The grape combination and vinification produce an intense, pink-colored to light rose-colored wine. The aroma is warm and intense, while the taste is sweet, smooth and well-rounded.
Mandatory aging is 3 years.
There is also a Sant’Antimo Vin Santo Occhio di Pernice Riserva, where the aging requirement is 4 years.
Both types must age in small oak barrels (caratelli).
