This dessert wine uses the grapes, Trebbiano Toscano and/or Malvasia Bianca (70-100%), together with other, local green grapes.
The grapes are gently plucked and dried naturally, after which they are carefully pressed between December 1 of the harvest year and March 31 of the year following the harvest.
The color ranges from a golden straw yellow to an intense amber color. The aroma is ethereal, intense and characteristic, while the taste is harmonious and smooth. In the sweet Amabile version, the taste is more rounded.
Sant’Antimo Vin Santo is available as Amabile (sweet) with 3% residual sugar, and Secco (dry) with 2% residual sugar.
Both types must be aged for 3 years in small oak barrels (caratelli).
There is also a Sant’Antimo Vin Santo Riserva DOC, where the aging requirement is 4 years in the aforementioned barrels.
Both types are excellent dessert wines, or just for pleasure after the meal.
