The Montecarlo DOC allows wine growers to produce a red dessert wine called Vin Santo Occhio di Pernice. The grapes are a loosely defined variation of the red grapes grown in the zone's fields.

After plucking, the grapes are dried on straw mats, on shelves in custom drying rooms or lofts. In the spring, the grapes are pressed and the must is fermented in small oak barrels (Caratelli).
The result is an intense, pink-colored wine with a warm and likewise intense aroma, together with a sweet, smooth and well-rounded taste.
Served with desserts or at the end of a meal.
