According to the DOC, Montecarlo wine producers are allowed to produce Vin Santo, a dessert wine. The grapes are a loosely defined variety of the green grapes that are cultivated in the zone's fields.

After plucking, the grapes are dried on straw mats or shelves in custom drying rooms or lofts. In the spring, the grapes are pressed and the must is fermented in small oak barrels (Caratelli).
The color is straw yellow, with a tendency toward gold or an intense amber. The aroma is ethereal, intense and characteristic, with a harmonious and smooth taste. There is both a dry and a sweet version, and especially the latter has a very round taste.
The mandatory aging period is 3 years.
There is also a Montecarlo Vin Santo Riserva, where the aging requirement is 4 years.
The drier version is served as an aperitif, and the sweeter to dessert or as an after-dinner wine.
