This white dessert wine is made from grapes, which after a separate selection process, are gently plucked and dried in custom drying rooms or lofts in leaves. Production using the dried grapes can first begin on December 1 and latest by March 31.
Colline Lucchesi Vin Santo DOC is an intense, golden wine with a tendency towards amber. The wine is pleasant, balanced and characteristic in its aroma, and the taste has well-adjusted, sweet hints of raisins in the sweet version. The dry version is smooth and harmonious.
Mandatory aging must be done in small oak barrels (caratelli) for 3 years.
Served with desserts or as an after dinner drink.
