This Riserva, the most recent DOC in Calabria, is made from the same grapes used for the unaged Bivongi Rosso and is cultivated in the area around the town of Bivongi on the Ionian coast of the Calabrian peninsula.
As with its cousin the grapes used are Gaglioppo (locally, Magliocco) and/or Greco Nero (Maglioccone) (30-50%), Nocera and/or Calabrese (locally, Nero d'Avola) (30-50%) and/or Castiglione (30-50%) with permission to use up to 15% non-aromatic grapes.
The colour is more or less intense tending to garnet with age. The fragrance is vinous, characteristic and delicate. The taste is dry, harmonious and appealing.
The obligatory aging period is two years. Can be stored for up to five years.
