This barrel aged Castel del Monte Cabernet Riserva DOC is produced from the same grape as the non-aged version, namely from Cabernet and/or Cabernet Franc (90-100%), with permission to add local, non-aromatic red grapes (0-10%).
Castel del Monte Cabernet Riserva DOC has a characteristic scent and it is as dry, pleasant and rather full-bodied wine. The color is dark ruby red, which turns to garnet red, which is enhanced after storage.
The legal required aging period is 2 years, of which at least 1 year must be in wooden barrels. The process must start no sooner than on January 1st of the year following the harvest.
Enjoyed to roast or with matured cheese.
