Goes fine with fish dishes.
Note:
All white wines in Contea di Sclafani are also produced as Dolce, where the minimum alcohol concentration must be 11%. The color is intense straw yellow, the aroma characteristic and intense and the taste velvety and balanced.
If the grapes are harvested after October 1 of the harvest year, they are dried on the vine. Afterwards, the must is vinified in oak barrels (for a mandatory 6 months), and the finished result is indicated by the label designation ”Vendemmia Tardiva” (late harvest).
Vendemmia Tardiva is a dessert wine that color wise spans from straw yellow to amber. The aroma is characteristic, intense and persistent, and the taste soft, harmonious and mellow. The minimum alcohol concentration is 18%.
All white and rosé wines are also available as Spumante, where the second fermentation has either been done according to Metodo Classico or Metodo Martinotti (Charmat). The minimum alcohol concentration is 11.5%. These wines are served as aperitifs.
