Controguerra Passito Rosso DOC is a red dessert wine made from the Montepulciano (70-100%) grape, with the permission to add local blue grapes (0-30%).
This wine is produced in the same way as the white Controguerra Passito Bianco DOC, which means that the grapes are selected, carefully plucked, and then dried in special drying rooms or lofts on shelves of straw mats, netting or the like. The grapes are pressed between November 1 of the harvest year and March 31 of the following year. This process is called 'appassimento'.
Controguerra Passito Rosso DOC is garnet red tending to brick red after aging. The bouquet is etherial and distinctive. The taste is balanced and mellow.
There is also a Controguerra Passito Rosso 'Annoso' DOC with a longer aging requirement.
Controguerra Passito Rosso DOC is an excellent companion to desserts or sweet cakes.
