The dessert wine Controguerra Passito Bianco DOC is made from the grape varieties Trebbiano Toscano and/or Malvasia Bianca and/or Passerina (60-100%). Local green grapes can be added (0-40%)
The grapes are selected, carefully plucked and then dried in special drying rooms or lofts on shelves made of straw mats, netting or similar. The grapes are pressed between November 1 of the harvest year and March 31 of the following year.
The mandatory aging period for Controguerra Passito Bianco DOC is one year before being released to the market.
When aged, Controguerra Passito Bianco DOC changes colorwise from straw yellow to an intense amber color. The bouquet is etherial and distinctive, the taste balanced and mellow.
There is also a Controguerra Passito Bianco 'Annoso' DOC, with longer mandatory aging requirement.
