This dessert wine is produced from the same grapes as Controguerra Passito Bianco DOC which is Trebbiano Toscano and/or Malvasia Bianca and/or Passerina (60-100%). In addition to this mixture, local green grapes can also be used (0-40%).
As with its younger brother, the grapes are selected, carefully plucked, and then dried in special drying rooms or lofts on shelves of straw mats, netting or the like. The grapes are pressed between November 1 of the harvest year and March 31 of the following year. The process is called 'appassimento'.
The mandatory aging period for Controguerra Passito Bianco Annoso DOC is 30 months beginning on March 31st in the year following the harvest. Obligatory aging must be on 500 liter barrels.
Controguerra Passito Bianco Annoso DOC varies in color from straw yellow to an intense amber color after aging. The aroma is etherial and distinctive, while the taste is harmonious, balanced and velvety.
Goes very well with desserts.
