The dessert wine, Erice Vendemmia Tardiva Zibibbo, is made from the same grapes as Erice Moscato, Passito and Spumante Dolce, which is synonymous with Zibibbo (Moscato di Alessandria) (95-100%), with permission to add local green grapes (0-5%).
The grapes are allowed to dry while still on the vine, after which they are plucked manually.
The result of all these efforts is a straw to golden yellow wine with a characteristic and persistent aroma. The taste is sweet and harmonious.
