Tannins are also called "gallotannins" (which in the chemical sense, is not entirely correct). Tannins may be divided into two main groups: those of the skins, the hydrolyzable, and those of the grapes, the condensing. Tannins felt like the bite and the drying feeling you have in your mouth, especially between the cheeks and gums while drinking certain types of red wine, for example Barolo and Taurasi. The intensity depends on the grape varieties, vinification and aging.
