Vino Novello

It means "new wine" and is usually a red wine made in the marketing smart Beaujolais Nouveau style. According to the Wine Law, this type is sold by 6th of November of the harvest year. As its French cousin, the wine is more of a marketing stunt and it has some uninteresting splashes, which we have not taken the time to mention in the Italian Wine Guide. Nevertheless we can state that the wine is produced through the "macerazione carbonica" method, where whole grapes are put in a closed tank. Lack of oxygen causes the grapes own enzymes to start an inner fermentation and due to CO2 accumulation, grapes are bursting. Then, the grapes are fermented in the normal way using, using added yeast cells.
